Tartiflette, is a recipe based on Reblochon (a french cheese) and has been created in the 80s.
Tartiflette comes from the word “tartiflâ” meaning potato in Savoyard’s dialect. Apparently this dish was inspired by a Franco-provencal recipe based on potatoes, cheese and onions cooked in a long pan.
This dish is extremely popular in the winter,  it is fairly simple and quick to make, and have enough calories to get in shape after a morning of skiing.

Ingredients for 4 people

  • 1kg (2.2 pounds) medium potatoes or take about 3 large potatoes per person
  • 1 Reblochon
  • 200gr (0.4 pounds) bacon
  • 1 large onion
  • 1 half-glass of white wine (Apremont of Savoy for example)
  • salt and pepper


Method

  1. Peel and wash potatoes, cut them in half and dip them in boiling salted water until your knife cuts easily into.
  2. Leave to cool then cut into slices.
  3. Peel and chop your onion and fry in a pan for 3 minutes before adding the bacon (without additional fat) and let cook for another 5 minutes.
  4. Add the wine and mix the potatoes with onion and bacon.IMG 2056 300x225 In Tartiflette we trust
  5. Place in a baking dish.
  6. Cut large slices of Reblochons and and lay it above.
  7. Bake in hot oven at 200°C (392°F) for about 20 minutes (until cheese is melted and golden brown)
