French Genoise with pear
Génoise is an all-purpose cake that I use in many recipe such as this “Bûche de Noël” (the 1st layer)
Basically a génoise is a sponge cake made with butter, its firm texture allows it to be cut into many shapes.
Usually there is no fruits in the recipe, but for Christmas I wanted to try a new génoise, but I didn’t find any recipe, so I design that one.
Ingredients for a 7-inch Round Cake
- 1 Pear
- 40g Butter (1 1/4 ounces)
- 60g Flour (2 ounces)
- 80g Sugar (2 1/2 ounces)
- 3 Eggs
Cut the pear into small cubes.
In a bowl, beat eggs (the white and the yellow together) until the mixture doubles in volume, gradually adding sugar.
Mix the flour and the pear and put it in the bowl.
Put the dough into the buttered mold and cook about 25 minutes at 180 ° C.
And you have finish the 1st part of my “Bûche de Noël” !
