Soya Bechamel Sauce
Ingredients :
Put the butter in a pan, place it over low heat. Once the butter is melted, pour the flour and stir with a wooden spatula to obtain a homogeneous mixture, continue cooking for 5 minutes (without browning).
Pour cold milk gradually, whisking quickly to avoid lumps, then pour the soya cream. Add nutmeg, salt and pepper. Cook another 5 minutes or until the bechamel coats your spoon.

This herbal preparation replaces easily the cream. Anything is possible! It is used both in hot or cold , to cook a dish or a dessert : sweet sauce, salty sauce, hot or cold soups,quiches, cakes … It gives the same fondant than cream dishes but are much lighter to digest. However, to keep it all its velvety, do not boil.
